Simple & Delicious Chicken Noodle Soup
When I’m craving Chicken noodle soup this is the soup I end up making every time.
Sometimes it is fancier than others. Sometimes I make it from a chicken that I roasted myself and then turned around after deboning the chicken, taking the bones and making a 24 hour bone broth from it.
And sometimes it is made out of a rotisserie chicken from Costco.
Sometimes it it simply the easy button and made from canned chicken.
But no matter how simple or how homemade it is. I have found this basic chicken noodle soup to be super soothing for any occasion and especially helpful when I or someone in my family is not feeling great.
Ingredients:
Instead of me saying organic this and organic that. I’m going to tell you here that everything I do normally is organic. So I will save us all the trouble of the fancy and leave it plan speech! 😀
- 1 Whole Chicken
- 1 Large Onion
- 2-3 Carrots
- 3-4 Celery Stalks
- 2-4 Cloves of Garlic (If you or a family member is not feeling well and you are making this for them – just add the 4 cloves and call it a day.) 😀
- 6-8 Cups of Chicken Bone Broth
- 1 box of your favorite pasta (Orzo pasta, bow tie pasta, corkscrew pasta, or maccheroni to name a few fun ideas to pick from – we normally use gluten free pasta from Trader Joes that is spiral.)
- Extra Virgin Olive Oil
- Real Salt – This can be Sea Salt, Himalayan Salt, or just about any salt other than table salt. No to common Table salt – its not good for you!
Instructions:
- You are first going to want to get that onion chopped up and sautéing in a large stock pot or whatever soup pot you have on hand with a little EV olive oil (about 1 tbsp). Until it is translucent which should take no more than 5-6 minutes over medium heat. Add a generous pinch of salt. I use salt grinders so its a couple of twists with my salt grinder for me. This is important. Don’t forget the salt. 😀
- Then as that is cooking you can chop chop you carrots and celery to the size you like them in your soup.
- You are going to add you carrots and celery to those onions. Letting them saute together for a few minutes. Just so they get some yummy flavors releasing.
- Then you are now going to get that chicken ready – before you have started you should already gotten your chicken ready to toss in the soup. So shred it, chop it, or open that can and get ready to dump it. Because this is its moment to shine. Add you chicken to the pot and stir baby sir.
- Now don’t forget the garlic…You will want to crush the garlic because that’s how it releases all the goodness that God has packed into it for healing our bodies. So crush it and dice it up fine, or if you have a garlic press that is the best tool you can have in your kitchen next to pots, pans, and stirring utensils.
- Now at this point you are going to want to add salt again. Another generous pinch, or several more twists with the salt grinder/mill.
- Now add your broth stirring it all together. Let it sit with the lid on for about 15-20 minutes.
- While that is going you have two options. You can a) make your pasta according to the box, or if you made homemade pasta make it normal. Or b) at about the 10 min mark on the soup you can add it directly to the soup.
We don’t do that anymore because the soup makes enough for us to have leftovers next day and we like our pasta to remain semi al dente. We use gluten free pasta and it just breaks down to mush sometimes when we go to heat it up next day for lunch. So your choice. Your soup. You can always change it up next time. - Before you go to serve it. Taste it first to see if you like the flavor. If yes, great, you are ready to eat. IF not then add a little more salt, you should not be anywhere near over salted. But if you are just grab some potatoes throw them in the microwave until fully cooked (Don’t forget to poke them with a knife or fork first)- then cut them up, they will be hot, and throw them into the soup and you will be just fine. It will change the soup up a little, but it will still be delicious.
Tips:
You can also make this in your fancy Instant Pot – you will just need to translate for the time a bit.
You can also make this in the crockpot – it will take just a few hours and if you need it to go all day just sub out the pasta and do potatoes instead. It will be delicious and you will have a soup ready to serve when you get home from co-op or if you are just wanting to make lunch or dinner easier on you and less desires to go out to eat.

This soup has been a staple in my home for years. It truly can be a stand alone because it is perfect by its self. Or you can make a simple salad to go with it. Or you can have some bread with it. A simple sourdough bread goes really well with this soup.
